Pork Humba, sweet, Kapampangan-style adobo which pork cut into matchbox sizes with peanut.
Ingredients
- Pork Shoulder (Kasim)
- Pork Belly (Liempo)
- Soy Sauce
- Vinegar
- Sugar
- Peanuts (roasted and unsalted)
- Garlic
Procedure
- Step 1: Crush the garlic and chop it finely.
- Step 2: Remove the solid fat in the pork belly and cut it into matchbox sizes. Do the same with the pork shoulder.
- Step 3: Sear the pork belly. Sauté it in oil. Take out the excess oil afterwards off the pan.
- Step 4: Sauté the pork shoulder and add the garlic.
- Step 5: Add the soy sauce. Add sugar. Add a little bit of water and the vinegar.
- Step 6: Let it simmer for 30 minutes.
- Step 7: Add the peanuts.
- Step 8: Plate it and top with more peanuts.
