How to cook Pork Humba

Pork Humba, sweet, Kapampangan-style adobo which pork cut into matchbox sizes with peanut.

Ingredients

  1. Pork Shoulder (Kasim)
  2. Pork Belly (Liempo)
  3. Soy Sauce
  4. Vinegar
  5. Sugar
  6. Peanuts (roasted and unsalted)
  7. Garlic

Procedure

  • Step 1: Crush the garlic and chop it finely.
  • Step 2: Remove the solid fat in the pork belly and cut it into matchbox sizes. Do the same with the pork shoulder.
  • Step 3: Sear the pork belly. Sauté it in oil. Take out the excess oil afterwards off the pan.
  • Step 4: Sauté the pork shoulder and add the garlic.
  • Step 5: Add the soy sauce. Add sugar. Add a little bit of water and the vinegar.
  • Step 6: Let it simmer for 30 minutes.
  • Step 7: Add the peanuts.
  • Step 8: Plate it and top with more peanuts.
